It dosent matter when the pollination takes place as far as seed production. The seeds wont be any better or worse if its done early in the flowering cycle or later.
It takes a good 4 weeks for seeds to mature on the female tho, so the longer you wait to pollinate, the longer it takes to get mature seeds.
I have pollinated late in bloom for a massive seed run, then you have to wait until well after the peak harvest time until harvesting. Wait until the seeds turn from a whiteish/greenish color to a solid brown or tan color in the calyxes before harvesting. Fully mature seeds will almost fall out of the calyxes by themselves when ripe.
